Vegan Potato Recipe With Tomatoes And Peppers

This vegan potato recipe is incredibly simple and easy to make while traveling, and yet has lots of rich flavor from the fresh vegetables. We didn't even use oil or herbs and it was one of our favorite healthy vegan recipes in awhile.

There are small market stands all over the place in Istanbul. Everything is in season and much of it is local, though we haven't seen any organic produce yet. We found an organic store, but they only sold dry goods and soap.

We picked up the vegetables that looked good and made a simple meal out of it. With fresh vegetables (and a few fresh olives), you don't need much else to make a delicious meal.

Prep time: 10-15 min. Cooking time: 30 min.
Time from start to eating: 40-45 min.
Cost: 4 Turkish Lira (less than 3 Dollars)

Vegan Potato Recipe Ingredients
  • 3 large potatoes, diced
  • 2 red peppers, diced
  • 4 small tomatoes, diced
  • 1 cucumber, sliced and quartered
  • handful black olives, pitted and chopped
  • sea salt

Vegan Potato Recipe Directions
  1. Put the diced potatoes in a pot of lightly salted water, bring to a boil then turn down and simmer for about 30 minutes.
  2. While they are cooking, chop the rest of your vegetables. Once the potatoes are cooked, drain them and put the pot back on low heat. Add the rest of the vegetables and a sprinkle of salt, stir everything together, leave it to lightly heat for a few minutes, and you have a simple vegan potato recipe.
